Type 301 10" Chef Knife & 5 3/4" Chef Knife are all-purpose knives. The chef's knife is curved to allow the cook to rock the knife on the cutting board for a more precise cut. The broad heavy blade also serves for chopping. The chefs knife can be used for many culinary functions including slicing, chopping, dicing, and mincing.
Type 301 7 1/4" Santoku Knife is a general-purpose knife of the Japanese kitchen. The word "Santoku" refers to the three cutting tasks which the knife performs well: slicing, dicing, and mincing. The Santoku's blade and handle are designed to work in harmony by matching the blade's width/weight to the weight of blade tang and handle. The Santoku is a well-balanced knife.
Type 301 8" Carving Knife is a large carving knife. A carving knife is used to carve poultry, roasts, hams, and other large cooked meats. A carving knife is much thinner than a chef's knife and is generally shorter and wider than slicers, enabling it to make thin precise slices.

The forked tip allows the user to lift and move the tomato slices after they have been cut.

Chroma #800 Whetstone is a medium grit whetstone with rubber base. This stone is for sharpening and can be used on a daily bases.

But even the sharpest knife at some point begins to lose its edge and needs re-sharpening. Sharpen your high quality knives by hand with a top of the line original CHROMA sharpening stone. For best sharpening results, we recommend using a rougher grain to pre-sharpen, a medium grain for regular care, and the finest grain for a polished finish. To insure the knife remains in optimal condition for years:
Never place the knife in the dishwasher. Hand wash and dry after every use.
Regularly sharpen the knife using the original Type 301 whetstone. Under no circumstances should a sharpening steel be used, as it will damage the blade.
Store the knife in a safe, secure manner, for example, in a knife block so the blade is not left exposed.
Only use wooden or plastic cutting boards, never marble or glass when cutting with a Type 301.
Only use the knife to prepare food. Do not use to cut frozen foods, bones, or as a utility knife.
